Grass Fed Beef Rissoles
Good old rissoles! A wholesome, satisfying mid-week meal. I love a good quantity of herbs in mine and with grass fed, chemical free mince, they’re a nourishing meal choice. Serve with creamy mash and steamed greens. Leave the breadcrumbs out for a grain free option – they’ll just not hold together quite as well, but will still be fine.
Whilst grating the onions might be a bit hard on the eyes, it really creates a much better rissole than dicing the onions, whereby you’ll end up with small pieces of uncooked onion in the rissoles. For extra vegetables, you can add in some grated carrot and/or zucchini. For a lovely juicy rissole, be sure not to overcook them.
Derek stepped inside yesterday (as I was photographing these in the last light of the day), and exclaimed, “Yum! That smells delicious!” So, you don’t have to necessarily do something complex or fancy to really enjoy a meal.

Ingredients
- 750g Conscious Farmer beef mince
- 1 brown onion – grated
- 4 good sized sprigs thyme, leaves stripped
- ¼ cup parsley, chopped finely
- 1 egg
- 2 teaspoons Worcestershire sauce
- 1 tablespoons tomato paste
- 1 cup of loosely packed fresh breadcrumbs
- Sea salt, ground black pepper
Method
Place all ingredients in a bowl and mix thoroughly. Spoon out 1/3 cup portions and shape into rissoles – I made 10 rissoles using the 1/3 cup measure.
Take a pan or BBQ plate and heat to a medium temperature. Add olive oil to the pan or plate and brown rissoles on one side, flip and brown until cooked through. Serve with creamy potato mash and steamed greens. I love them with a bit of home-made tomato sauce too.
