Red Wine & Soy Marinated Beef Kebabs
Try these delicious marinated beef kebabs for fun food that you (and the kids) can get your fingers into. Oh, and spouses love them too! (Who doesn’t love an excuse to use our fingers with dinner every now and then?) Threading the kebabs is also a great job to have the kids help with. Have them build their own.
Marinate the beef the night before for best results, but this is not essential.
Marinade
3 tablespoon of olive oil
9 tablespoons red wine
3 tablespoon lemon juice
3 tablespoon soy sauce
2 clove garlic, minced
Pinch mustard powder
Fresh thyme sprigs, leaves stripped.
1 small brown onion, diced finely
Sea salt, cracked black pepper
1 pack of our rump or sirloin grassfed steak, diced into 2cm cubes
Combine all ingredients in a bowl. Add beef and marinate overnight (or for some hours), stirring a few times during marination.
Kebabs
The following ingredients are options for the kebabs – choose the combination right for you.
1 x red onion – cut into square segments (and divided into lots of 2-3 layers)
1 x green or red capsicum – cut into squares
2 zucchini – sliced thinly
3 x rashers bacon – cut into squares
Mushrooms – sliced (thread carefully so as to not break)
Fresh pineapple – cut into segments (optional)
Bacon – cut into squares
Take skewers and thread marinated beef cubes and other ingredients onto the skewers. If you’re using bamboo skewers, soak them in water while you cut up your ingredients, to prevent burning of the sticks during cooking.
Cook either on a BBQ plate at a medium heat, or under a grill. Be sure to cook until beef is just medium done and still juicy.
Serve on a bed of rice with the marinade drizzled over. (Be sure to boil the remaining marinade on the stove top before serving over kebabs and rice, as it has had the raw meat juices in it from marinating the beef).
