Spice Roasted Root Vegetables with Sirloin Steak

A tasty steak can easily transform from a fresh summer meal (with a crisp salad), to a wholesome winter meal when served with roasted root vegetables. Here’s a recipe for roasting with lovely spices and honey.

 

Ingredients

1 swede – cut into thin wedges
2 parsnip – cut lengthways
2 carrots – cut into quarters lengthways
1/2 sweet potato – cut into wedges
1 red or brown onion – cut into 6 or 8 wedges
1 beetroot (optional) – cut into wedges
1/4 cup honey
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon of cayenne pepper
Generous pinch sea salt

Preheat oven at 200oC.

Place the honey in a saucepan to melt. Add the spices and salt – cook for half a minute and remove from heat.

Peel vegetables, cut into pieces and arrange in a baking dish. Drizzle with a little olive oil or melted tallow. Drizzle with the honey mixture and stir to coat the vegetables.
Bake for 30 minutes or until cooked through.

Serve beside a juicy sirloin, t-bone, rump, scotch fillet (my favourite) or eye fillet steak, which can all be found in either of our Steak Hampers!
